Mozzarella/Cherry Tomato Salad Recipe
Trying to figure out what to do with all those cherry tomatoes? I made this salad and thought I'd share the recipe. It makes for a yummy lunch or side.
Mozzarella/Cherry Tomato Salad Recipe:
Two cups cherry tomatoes (different colored tomatoes are extra fun)
3/4 to 1 cup cubed mozzarella pieces (I sliced 4 string cheese sticks since I didn't have any fresh mozzarella on hand)
2 Tablespoons of olive oil (first cold pressed)
1 Tablespoon of white wine vinegar
1 Tablespoon each of fresh chopped basil and parsely
1 garlic clove, pressed
1 tsp salt
1/4 tsp pepper
Mix well. Chill. Enjoy.

First Day of 2014-15 School Year at Mission Road Academy
Finally found a name for our homeschool - "Mission Road Academy". I've been searching for a name for years, and now that we've moved here and are homesteading/homeschooling with a mission, it just rolls off the tongue!
I thought I would do "first day of school pics" with my kids this year since Josiah is actually taking one class out of the home. We signed him up for a Latin class (taught by another homeschool mom). It involves, writing, spelling and grammar, all the things he fights me on. So, we had to think out of the box on this one and so far he is loving it! His teacher is funny and it says that keeps his attention. Sometimes they just need to hear it from someone else ;)
Hailey is in 2nd grade this year. We're really going to focus on getting her to read independently this year.

This tall drink of water is a 5th grader this year. It is a testing year, so we are going to work hard on math, grammar and spelling. We finally got caught up on math (we got behind because of the move) and we are right were we need to be for him to know all the requirements of the state test this spring.
God is good and gracious as we enter into this new homeschool year. There were times I wanted to give up last year because it was so hard dealing with bad attitudes. I'm coming into this year with different strategies and tools, learning from my mistakes last year. Most importantly, I've got my Lord and Savior guiding me and giving grace both for myself and my children every single day of this journey. God is gracious and kind as He allows us to continue on this journey another year.
